- 4 (5 to 6oz.) boneless, skinless half chicken breasts cut into ¼ to ½ inch strips
- 2 teaspoons lime zest
- 2 teaspoon fine chopped jalapeño, seeded
- 3 tablespoons olive oil
- 2 teaspoons minced garlic
- salt and pepper
- Slaw Dressing:
- ¾ cup mayonnaise
- ½ teaspoon ground ginger
- 1 tablespoon sesame oil
- 3 tablespoon soy sauce
- 2 teaspoons fish sauce
- 3 tablespoon brown sugar
- 2 tablespoon rice vinegar
- Mango Slaw:
- 1 ripe but firm mango, peeled and seed removed
- 1 hot house cucumber
- 2 carrots, peeled
- ½ jicama peeled (about 6 to 8 oz)
- 1/2 red bell pepper
- ½ red onion sliced thin, and then half the slices
- 2 tablespoons cilantro chopped, (plus 1 tablespoon more for garnishing if desired)
- 4 large shallots, sliced thin
- 2 tablespoons peanut oil
- ½ cup roasted cashew halves, rough chopped
- Sesame seeds for garnishing (about 1 teaspoon)
- Place raw chicken in a bowl along with lime zest, jalapeño, olive oil, garlic and salt and pepper to taste. Marinate for 30 minutes.
- In a small bowl, add the mayonnaise, ground ginger, sesame oil, soy sauce, fish sauce, brown sugar, and rice vinegar. Using a wire whip, mix all the ingredients together, until well blended. Refrigerate until needed.
- Slice julienne using a mandoline, or sharp knife the mango, cucumber, carrots, and jicama. Place in a medium size bowl and add red onion slices and cilantro. Gently fold the dressing to the slaw, and mix together. Refrigerate until needed.
- In a 10 inch skillet heat peanut oil to a medium high heat and cook shallots for 3 to 4 minutes, until brown. Drain on a paper towel.
- Heat a 12 inch skillet, or wok to medium high. Add the entire chicken mix to the pan and stir fry until cooked throughout, about 5 to 7 minutes, or until juices run clear.
- On a plate put a mound of slaw in the middle and lean chicken strips along the side so they are vertical. Sprinkle the plates with fried shallots, cashews, sesame seeds and chopped cilantro.
- Serves 4 entrée or 8 appetizer
